Occasionally traditional cloth-bound cheese develops blue veins. It is not our intention to produce blue cheddar, but sometimes with traditionally made cheese, cracks develop in the outside rind, in which natural moulds grow. Some of our customers love this cheese as the 'blue' taste is subtle; not strong, and results in an interesting blue hard cheese.

We have analysed our cheese for nutritional values, but please do bear in mind artisan cheeses, made from raw milk are not standardised and values may vary throughout the year depending on the season, what the cows are eating and the number of cows in the herd. We buy from one farm only, so this affects the variation significantly.
