This unique cheese has been matured in the natural caves within Cheddar Gorge for up to 12 months. We are the first, in living memory, to reintroduce the maturation of cheddar cheese within Cheddar Caves, and have been delighted by the success. The taste is indeed extraordinary!
The maturation and flavour development is determined by the cave environment, specifically the constant temperature and relative humidity; it ‘moves on’ in development producing a unique, more complex cheddar flavour which is influenced additionally by the yeasts and moulds within the natural cave environment.
All our authentic cheddars are made the same way, just selected according to where and for how long they have been matured.
We avoid 13 of the 14 known allergens at our dairy – other than the unpasteurised cow’s milk. We make all of our cheese from cow's MILK

We have analysed our cheese for nutritional values, but please do bear in mind artisan cheeses, made from raw milk are not standardised and values may vary throughout the year depending on the season, what the cows are eating and the number of cows in the herd. We buy from one farm only, so this affects the variation significantly.
